Shrovetide has already passed in Russia and now it is being Easter fast. These gluten-free vegan pancakes with no refined sugar I dedicate to it.
Ingredients:
- 1 cup gluten-free Mix B «Schaer»
- 1/3 banana
- 1 tbsp maple syrup
- 1 tbsp flaxseed meal
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup coconut milk (I use AROY-D)
- 1/2 cup almond/cashew milk (I like to mix coconut with nut milk, but you can just take 1,5 cups of only coconut milk)
- olive oil for frying
Method:
- Mash 1/3 of banana and mix it well with milk and syrup.
- In another bowl, combine all the dry ingredients and then add wet mixture. Mix it until smooth and let set for 10 minutes.
- Fry on a pan for a couple of minutes on each side (medium heat, 1 table spoon of mixture for 1 pancake). Enjoy the great taste!
