Gluten free vegan pancakes with maple syrup

Shrovetide has already passed in Russia and now it is being Easter fast. These gluten-free vegan pancakes with no refined sugar I dedicate to it.

Ingredients:

  • 1 cup gluten-free Mix B «Schaer»
  • 1/3 banana
  • 1 tbsp maple syrup
  • 1 tbsp flaxseed meal
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup coconut milk (I use AROY-D)
  • 1/2 cup almond/cashew milk (I like to mix coconut with nut milk, but you can just take 1,5 cups of only coconut milk)
  • olive oil for frying

Method:

  1. Mash 1/3 of banana and mix it well with milk and syrup.
  2. In another bowl, combine all the dry ingredients and then add wet mixture. Mix it until smooth and let set for 10 minutes.
  3. Fry on a pan for a couple of minutes on each side (medium heat, 1 table spoon of mixture for 1 pancake). Enjoy the great taste!
